Recipe of the Week- Smoked Mackerel & Jersey Royals

Smoked Mackerel & Jersey Royals – Serves 4

Ingredients:

  • 450g potatoes (boiled and cut in half)
  • 10g chopped rosemary
  • 4 cloves of garlic (crushed)
  • 4 diced shallots
  • 175ml olive oil
  • 1 tbsp grain mustard
  • 1 tbsp white wine vinegar
  • salt and pepper
  • chopped parsley and chives
  • 1 tbsp horseradish
  • 4 smoked mackerel fillets

Directions:

  • Boil potatoes, strain in colander
  • Meanwhile make dressing, mix all ingredients expect horseradish, parsley and chives
  • Heat mackerel (medium heat grill)
  • Mix horseradish, chives and parsley into dressing
  • Pour over warm potatoes and serve with smoked mackerel

 

Recipe of the Week – Lemon Posset

Lemon Posset – Serves 6

Ingredients:

  • 600 ml / 1pt               Double Cream
  • 150g / 5oz                 Caster Sugar
  • 2 Large Lemons        Zest & Juice Only

Directions:

  • Place double cream & sugar in a large saucepan.
  • Bring the mixture slowly to a boil and then boil rapidly for three minutes.
  • Remove from the heat & cool.
  • Once cooled whisk in the lemon juice & zest.
  • Pour into six glass ramekins and chill in the fridge overnight if possible otherwise for at least 3 hours.
  • Serve with homemade shortbread.
