Recipe of the Week- Loaded Potato Skins

Loaded Potato Skins- Serves 4

Ingredients:

  • 4 medium sized jacket potatoes
  • 2 onions diced
  • 1 red pepper diced
  • 2oz/50g grated cheddar cheese
  • 2oz/50g butter
  • Salt and pepper

Directions:

  • Put the jacket potatoes in the oven (200c gas 6) for 1-1/2 hours, until cooked
  • Leave to cool for 5 minutes
  • Meanwhile, fry the onions + pepper in the butter for approx 5 minutes until slightly golden
  • Slice the potatoes in half horizontally
  • Scoop out the potato and put it in the bowl
  • Place the skins on a lined baking tray
  • Mash the potato with the onion + pepper mixture, add grated cheese + salt & pepper. Mix well
  • Fill the skins with the potato mix
  • Put them back in the oven until they are brown and crispy

Recipe of the Week- Chocolate Tiffin

Chocolate Tiffin    (no baking required)

Ingredients:

  • 200g/8oz digestive biscuit
  • 100g/4oz butter
  • 3tbsp golden syrup
  • 100g/4oz dried fruit (use a mix of currants, raisons, apricots, sultanas or cranberries- whatever you have in your cupboard)
  • 2tbsp cocoa powder
  • Topping- 100g/4oz dark chocolate

 

Directions:

  •  Grease and line a 18cm/7in square cake tin
  •  Put biscuits in strong plastic bag- bash with rolling pin until crumbs
  •  Melt butter and syrup in a pan
  •  Add cocoa powder, fruit and biscuit crumbs
  • Spoon into tin and press down firmly
  • Melt chocolate in a heatproof bow over hot water. Spread over chilled base.
  • Chill for 2 hours. Cut into slices and serve (can be frozen)
